baked oats — I know, I know, but hear me out

My nan used to do proper porridge every morning without fail, October through March, no exceptions. I've never been that disciplined tbh. But baked oats I can actually manage because you just shove it in the oven and forget about it while you're getting ready. Basically — mash a ripe banana into your oats, crack an egg in, splash of oat milk, handful of whatever's around. I did frozen blackberries this week because they're proper seasonal and cheap and honestly they go jammy and a bit gorgeous in the oven. Pinch of cinnamon, maybe a teaspoon of honey if your banana wasn't very sweet. 20 minutes at about 180. That's it. I've been stirring a bit of matcha through the oat mix before it goes in — sounds odd but it just sort of fades into the background, you don't really taste it, and I feel like it balances me out in the mornings rather than the coffee spike I used to rely on. Can't promise anything, just works for me. Comes out of the oven all puffed up and smelling of autumn and it keeps you going until well past lunch which as a teacher is basically the only thing I ask of breakfast.
