halloumi and peach salad, yes really

Genuinely thought this sounded a bit try-hard when I first saw it somewhere but I had a peach that was basically one day from the compost caddy so here we are. Fry halloumi slices til golden, slice up the peach, throw it all on whatever leaves you've got. I had rocket which was ideal tbh, that bitterness works. Handful of walnuts if you've got them, drizzle of honey, tiny bit of red wine vinegar. That's it. Done in maybe 12 minutes and it's proper summer food — sweet, salty, a bit sharp. The peach kind of softens slightly from the warmth of the halloumi if you plate it fast and honestly that bit is everything. Mind you I nearly ate it straight from the pan standing at the counter which would have also been fine.

made something similar last summer with mango instead of peach, the sweetness works the same way — might try it with the red wine vinegar next time though, I just used lemon

red wine vinegar is worth it Nina, lemon's a bit one note with halloumi I find

do you just eat it warm or let the halloumi cool down a bit first?
