made a root veg stew last night and it actually slapped
Had a load of random veg knocking about — parsnips, carrots, a sad-looking turnip — and it was one of those evenings where you just can't be bothered but also don't want to order in again. So I chucked everything in a pot basically.
Roughly what I did:
- parsnips, carrots, turnip all chopped chunky (don't overthink the sizes)
- half a tin of white beans because they were there
- two cloves of garlic, one onion, bit of celery if you have it
- veggie stock, a bay leaf, dried thyme
- I added a small piece of kombu to the stock because I had it and it gives this quiet depth that's hard to explain, very umami without tasting Japanese if that makes sense
- simmered for maybe 35 minutes, done
I nearly added a tin of tomatoes but honestly glad I didn't — it stays this pale golden colour which looks a bit plain but the flavour is properly good. Served it with sourdough that I'd left out too long and was slightly tough. Still ate three bits of it.
To be fair it's the kind of thing that's even better the next day cold out the fridge at 7am which is unhinged behaviour but here we are.
