my go-to quick breakfast before work
Right so I've been trying to sort out what I eat in the mornings because honestly before all this I was just grabbing a sausage roll from the garage on the way in. Not ideal.
What I've been doing the last few weeks is scrambled eggs on oatcakes — I know that sounds a bit odd but bear with me. Two eggs, bit of skimmed milk, pepper, done in maybe four minutes. Oatcakes instead of toast because they keep me going longer, or at least I think they do. I'm not a nutritionist like, I just noticed I wasn't starving by 10am anymore which used to happen every single day without fail.
The thing is I always thought eating better meant it had to take ages and be dead complicated. And sometimes it does if I'm being honest, I've had some right disasters in this kitchen. But this one's basically foolproof. Even on a Tuesday when your head's not in it and you've got a meeting at nine you don't want to be in.
