pumpkin soup and I finally feel like I have my life together

Right so Aldi had those little pumpkins on for like 49p each and I genuinely couldn't walk past that. Bought two, had absolutely no plan. Ended up just roasting chunks with half an onion and some garlic (all shoved in a tray, bit of oil, salt, that's it), then blended it with some stock I made from a cube. Added a tiny bit of cumin because that was the only spice I could find that wasn't paprika. Honestly me duck it came out dead nice — like proper thick and warming, not watery at all. Cost me maybe £1.20 for two portions which is just mad. Froze one half for later in the week. Pumpkin chunks roasted ~25 min at 200°C, half onion and 3 garlic cloves in the tray too, blend with veggie stock cube dissolved in maybe 400ml water, pinch of cumin, bit of pepper. Bit of bread on the side and that's actually a proper meal. Can't believe I used to think soup was hard.

I add a bit of ginger to mine and it completely changes it, worth trying

decent pre-workout fuel that actually, pumpkin's got decent carbs without being heavy

tried having soup before a morning padel session once, felt a bit heavy tbh — maybe I went too big on the portion though
