roasted peach and puy lentil salad — sounds odd, tastes dead good
Right so I had a load of peaches going soft on the counter and was fully planning to just eat them over the sink but then I thought, hang on, let me actually do something with these.
This came together on Sunday and I've made it twice since, which for me is basically an endorsement.
What you need (serves 2):
- 2 peaches, halved and stoned
- 150g cooked puy lentils (tinned is fine, honestly)
- Large handful of rocket
- 60g crumbled feta
- Small handful of fresh mint
- 2 tbsp toasted walnuts
- Dressing: 1 tbsp Blodyn Aur rapeseed oil, 1 tsp honey, 1 tsp apple cider vinegar, pinch of chilli flakes, salt
How:
Roast the peach halves cut-side up at 200°C for about 18-20 minutes until they're soft and starting to caramelise at the edges. While those are going, mix the lentils, rocket, most of the mint and the walnuts in a bowl. Whisk the dressing together. When the peaches are done, let them cool for five minutes then slice them and layer on top. Scatter the feta, the rest of the mint, drizzle everything with the dressing.
That's genuinely it.
Why it's actually worth eating
Puy lentils are one of those things I keep pushing on clients because people chronically underestimate legumes. About 18g of protein per 100g cooked, plus a decent hit of iron and folate. The fat from walnuts slows glucose absorption which means you're not crashing an hour later — and in combination with the lentils it's genuinely filling in a way a lot of summer salads just aren't.
The peach thing isn't just for flavour either. Roasting concentrates the natural sugars but the fibre is still there doing its job, and peaches are a reasonable source of vitamin C, which actually helps with non-haem iron absorption from the lentils. So the combination is doing more than it looks like.
Rough macros per serving: ~380 kcal / 22g protein / 38g carbs / 16g fat
Mind you I did nearly burn the peaches the second time because I got distracted by Blod losing her mind at something in the garden. So maybe set a timer.
