this charred corn and black rice situation
Had some leftover black rice in the fridge from yesterday and honestly wasn't sure what to do with it. Then I remembered I had two corn cobs and thought, right, let's just char them directly on the gas hob the way my mum does for bhutta.
So I did that, let them cool, then stripped the kernels off. Mixed it with the black rice, thinly sliced red cabbage, a load of fresh coriander and mint, half a diced mango, and some thinly sliced red chilli. Dressing is just lime juice, a bit of toasted cumin, tamari and a tiny bit of maple syrup.
The black rice is doing serious work here protein-wise — way more than regular rice, and it goes all glossy and dramatic-looking against the mango which honestly made me feel like a proper food photographer for about two minutes.
I added some edamame too because I had them and needed the extra protein after yoga this morning. Chai was very interested in the corn situation. She was not invited.
